“We started the harvest 23-24 and once again we are super excited to start preparing high-quality coffees that have had all the care during the post-harvest season! In speciality coffee in Huehuetenango we are going through a difficult situation due to the lack of labour, however, we are applying all the ingenuity possible to achieve this long-awaited harvest. The ripe cherries have been selectively hand-picked and washed with fresh water and at the same time the floating grains are removed. The cherry is carefully placed on African beds in the sun for 23 days and monitored closely until it reaches the optimal drying point.
